Well believe it or not, you can change the sitting height significantly with how you place the canopy. You can notice several different windshield angles and canopy rake as you look across our wonderful fleet. Got go with what works for you.

Yes James is onto something here;
Bruce F noticed my canopy right away. 'Feisty' has a high skirt around the back. It raised the back of the canopy up a bit and increases the headroom. Good thing too, as I barely fit.
I look at it as a source of drag, maybe 'Feisty' would be faster if the rear skirt were more fair, but then I wouldn't be flying in it, so I look for improvements somewhere else.

Many of us jacked the roll bar up 3/4" over standard when building. The original canopy had just enough extra meat to cover this, but did not fit the "S" very well. The Airplane Plastics version takes care of the problem.

Here's my canopy. It does have the 3/4" added to the roll bar plus I raised the canopy another two inches. This canopy is from Aeroplane Plastics. Looking at the cross section of the canopy it becomes an airfoil. I have not seen a reduction in speed as I cruise at 24/23 and indicate 180 mph plus at sea level.
